Sidewalk Burritos

When I worked up in Portland, Oregon, there was a sidewalk vendor who made the best burritos. The cart always had a line stretching for half a city block during the lunch hour. Maybe the line wasn't always that long, but the cart was very popular, and always had a crowd, even in Portland's famous downpours. This is a veganized version of those burritos. They're big and messy, and oh so tasty!

Flour tortillas (the larger the better)

1 can/two cups black beans, heated

Morning Star Meal Starter Chicken Strips, browned

2 cups Cooked Brown Rice - warm

1 can/two cups stewed tomatoes (Mexican Style preferred), tomatoes crushed and heated thoroughly

Tofu Sour Cream

Vegan Shredded Cheese

Methods/steps

Warm the tortillas.

Layer the rice, beans, and chicken on the flour tortilla, and wrap with the ends tucked in.

Grill slightly on both sides until the tortilla is brown and slightly crisp.

Remove burrito to serving plate.

Top burrito with tomatoes, sour cream and cheese.

Enjoy!

Additional Tips

I have a pot of beans, pot of rice, pot of tomatoes, and skillet of chicken all on the stove keeping warm until everyone has had seconds - or even thirds.

Add tobasco, hot sauce, pepper sauce, or your favorite sauce to add some 'spice'.
