One of the biggest challenges we faced - and one of the questions we're most often asked - is how do you plan a weekly menu? How do you put main dishes and side dishes together, to make sure you get everything you need? Most diets revolve around 10 favorite dishes or so. We found that oatmeal is a quick, easy, and filling breakfast, and is usually how we start our day. Our lunches are usually comprised of soup, but dinner does present a challenge. I've always planned a weekly menu, and have incorporated my planning into our new lifestyle. This makes it easy to stick to the vegan diet (especially in the beginning) without getting bored, and we only need to make one major trip to the grocery store a week. Each week also includes two 'alternate' dinners, in case I don't have the ingrediants, time, or that night's meal just doesn't sound good that day. We've included our weekly menus on Easy Vegan to help others. We'll also be adding holiday and other special menus as we create them.
