Almost Chicken and Squash Stir Fry

Description

This is a recipe I made up one night when there was nothing in the house to cook. It's become a favorite menu item. As with most stir-frys, you can add whatever vegetables you have on hand to change the flavor. It makes a great main dish, or leave out the 'chicken' and serve as a side dish.

 

I love sautéed garlic. If you're not a big garlic fan, reduce the amount of garlic, or omit completely.

Cooking Spray

1 head garlic (more or less to taste) - half larger cloves, but leave the garlic in larger pieces

1 cup mushrooms, sliced

2 green zucchini cubed in bite-sized pieces (if you have monster zucchini, you'll want to reduce the number of zucchini. The amount of yellow and green squash in our recipe is usually a 1:1 ratio)

2 yellow squash - cubed in bite-sized pieces

1 onion, sliced

One package of Morning Star Meal Starter Chicken Strips

Methods/steps

Spray a skillet with the cooking spray.

Brown Morning Star Meal Starter Chicken Strips, and remove from pan.

Re-spray skillet and saute garlic and mushrooms until lightly browned.

Lower heat. Add onion, zucchini and squash, and cook until tender, stirring often to prevent scorching.

Once zucchini, squash and onion are cooked to your preference (some people like their vegetables 'crisper' than others, so this is up to you), add the Chicken Strips and heat thoroughly.
