Baked Apple Crisp Cereal

This yummy baked cereal is similar to an apple crisp dessert - without the sugar. Wonderful right out of the oven, it's also really good as left-overs the next morning (or for a snack later in the day).

2 chopped apples (about 1 1/2 - 2 apples)

2 cups old-fashioned rolled oats

3 cups soy milk (may need a little more)

2 tsp vanilla

1 tsp sea salt

chopped walnuts (optional)

Methods/steps

Preheat oven to 350 degrees

Spread the apples in the bottom of a 2 qt baking dish

Layer the oats over the apples, evenly

The mixture should be 1/2 to 3/4 up the side of the baking dish

Mix the soy milk, vanilla and salt together in a separate bowl and then SLOWLY pour the milk mixture over the apple/oat mixture so as not to disturb the oats and apples too much.

Sprinkle the chopped nuts over the top, and then lightly sprinkle cinnamon over the walnuts.

Bake for 45 minutes or until the mixture has 'set'.

Serve right out of the oven, or let cool.

Left-overs can be served cold or reheated.

Additional Tips

Add raisins to the apple mixture for added taste.

We haven't tried it yet - but I'm pretty sure rhubarb would be good in this recipe as well.

Be creative with your toppings - try different nuts, raisins, coconut, etc., for different taste.
