Baked Layered Casserole

DescriptionA hearty vegetable casserole perfect for dinner. A great change of pace when you feel like all your vegan dinners are starting to look like a vegetable garden.Ingredients3 carrots, sliced as thinly as possible (approximately 1/8") 1 lb fresh or frozen green beans 1 yellow onion, sliced into thin rings 2 cups sliced fresh mushrooms 1 can diced tomatoes Garlic Powder Italian Seasoning Salt and Pepper Methods/stepsPreheat oven to 350 Spray an oven-safe large casserole dish (2 quart or bigger), perferably with a lid. Layer the vegetables as follows: carrots green beands onions mushrooms Lightly sprinkle garlic powder, Italian Seasoning, salt and pepper over everything Carefully pour the diced tomatoes on top. If using stewed tomatoes, break up larger pieces. Cover and cook for one hour. Reviews |
