Black Bean Mexican Casserole

Description

An easy vegan dinner recipe that's filling and delicious. Quick and easy to make, and tastes delicious.  If jalapenos are too spicy, substitute diced green chilis.

1 onion, chopped

1 green pepper, chopped 

1 can corn, drained

1 can black beans, drained

1 can stewed tomatoes 

1 can sliced olives

1 can diced jalapenos  

1 cup cornmeal

2 tsp chili powder

1 1/4 cup soy milk

Shredded 'fake' cheddar cheese 

 

Methods/steps

Pre-heat oven to 350

Spray a 9 x 12 (or equivalent size) casserole dish with non-stick cooking spray.

Combine all ingrediants - except cheese! - in a large bowl.  

Mix well.

Pour into casserole dish and sprinkle with cheddar cheese.

Bake (uncovered) for 45 minutes.
