This is a vegan-adapted Weight Watchers recipe. Tasty, easy to prepare. For an extra yummy 'crunch' top with toasted tortilla strips or corn chips.

Deceptively easy, this recipe can be doubled for more servings. It's a great office potluck recipe, too. Just double the ingrediants, put in a crock pot and simmer on low for two hours to heat through.
