Fajita Salad

Description

We made up this recipe after being on a completely raw diet for two weeks, and just needed something a little 'more'. We don't cook our vegetables in this recipe, which keeps the vegetables fresh and full of flavor.

1 Package Morning Star Meal Starter Beef Strips

1 Green Pepper, cut into thin strips

1 Red Pepper, cut into thin strips

1 Red Onion, cut into thin strips

2 Tomatoes, cut into thin strips

6 cups torn spinach leaves or lettuce

 

 

Methods/steps

Saute the Morning Star Meal Starter Beef Strips in cooking spray until warmed through and slightly crispy.

Toss with the peppers and onion.

Put a bed of torn spinach leaves or lettuce on individual serving plates.

Top with the peppers/Beef Strips mixture and tomatoes.

 

 

 

Additional Tips

Serve with tofu sour cream, salsa, and guacamole as garnish. Warm corn tortillas are a great accompaniment to this salad.
