1 medium zucchini, use vegetable peeler to slice into long, thin strips
2 carrot, julienned
½ cup purple cabbage, shredded
1 green onion tops and bulbs, chopped
2 tomatoes, diced

Methods/steps

Toss all ingrediants in a bowl. Serve with favorite dressing, or splash with apple vinegar.
