Roasted Vegetables

Another experiment that we've added to our regular menu. As with most experiments, change the ingrediants, amounts, and seasonings to your own taste.

Cooking Spray

1 head of garlic, peeled.

1 - 4 combined cups of your choice of "hard vegetables": new potatoes, turnips, parsnips, sweet potatoes, carrots, beets, etc.

1 - 4 combined cups of your choice of fresh (not frozen or canned) "soft vegetables": onions, zucchini, yellow squash, mushrooms, green beans, cauliflower, broccoli, eggplant, green onions, bell peppers, etc.

You should have one cup of combined vegetables per serving if using as a side, or 2 - 3 cups of combined vegetables per person if serving as a main course.

Seasoning Salt

Methods/steps

Preheat oven to 450 degrees.

Spray a jelly roll pan or a cookie sheet with the butter spray.

Mix the hard vegetables and garlic together, and place in a single layer on the cooking sheet. Spray vegetables lightly with cooking spray and roast in oven for 15 minutes.

Mix the hard vegetables together with the soft vegetables, and redistribute in a single layer on the cooking sheet. Spray vegetables lightly with the buttery spray, sprinkle with seasoning salt, and roast for another 15 minutes or until vegetables are tender.
