Stirred Not Fried

Description

This can be sauteed for a stir-fried meal, or served raw as a salad.  Makes a wonderful filling for pita bread sandwiches with hummus, too.

As with any stir fry, you can add whatever vegetables you prefer, and omit those you don't care for. The tasty secret of this recipe is 'peeling' some of the vegetables, instead of chopping or slicing them.  It adds a different texture, look, and taste to an old stand-by dinner.

Zucchini, peeled to the seeds with a vegetable peeler

2 carrots, peeled to the center with a vegetable peeler 

1 onion, halved and quartered (or smaller)

1 cup broccoli florets (cut smaller if you prefer)

2 stalks celery, sliced 

 

 

Methods/steps

Mix all together and saute until crisp-tender (5 minutes or so).

Additional Tips

I didn't have any when I 'made up' this dinner tonight, but I think the yellow crookneck squash, "peeled" in the same fashion as the zucchini and carrots would be great too - as well as mushrooms, garlic, red cabbage, sugar snap peas, and anything else you can think of.
