Taco Salad

Description

Beans replace meat protein in this classic favorite.

6 Cups torn lettuce or other greens

1 Green Pepper, diced

1 Red Pepper, diced

1/2 red onion, diced

1 ripe avacado, diced

1 tomato, diced

1/4 cup sliced olives (more or less to taste)

2 cans black beans (or 4-5 cups cooked beans), rinsed and drained

1 can or package frozen corn

1 package Taco Seasoning Mix

Methods/steps

Add 3/4 cup water to taco seasoning mix and stir well.

Mix together black beans and corn in a saucepan.

Add taco seasoning mix and simmer on low until heated through.

In the meantime, toss together lettuce, red onion and peppers, divide among serving plates.

Divide and layer avacado, tomatoes and olives over lettuce mix on each plate.

Drain liquid from the bean and corn mixture in a strainer.

Top the veggies with the bean mixture.

Garnish with tofu sour cream, Veggie cheese shreds, and salsa.
